Here in Southern Spain, there are many Moorish influences, left over from when the Moors invaded Spain.
These influences include the stunning architecture, the beautiful multi coloured tiles you see everywhere in the South and not to be forgotten the food.
Spanish cuisine regularly includes Moorish spices and produce such as saffron, apricots, artichokes, carob, sugar, aubergines, grapefruits, carrots, coriander and rice. These ingredients remain a firm point of reference for Spanish and Andalusian recipes.
With that in mind this weeks #NoMeatMonday recipe is for Moorish Falafels. They are easy to prepare and make a tasty #NoMeat meal.
We serve our warm falafels with a salad of chopped cucumber, onion & tomato, season well, add to a pitta bread or wrap, with hummus, garlic sauce or tzatziki and spicy sauce to taste.
